Ingredients
- 2 cups of mixed olives (different colors and sizes)
- 5 tbsp chopped fresh oregano
- 1 fennel bulb, trimmed
- 1 orange, zested and juiced

Preparation
Step 1
Combine olives and oregano and toss. Set aside.
Shave fennel as thin as possible and add to olives, tossing well. Add zest and juice and toss again, perhaps with a drizzle of great quality extra virgin olive oil.
