Fresh Tomato Pizza Sauce

Ingredients
- 2 Lbs. Plum Tomatoes
- 3 Tbs. Tomato Paste
- 1/4 Tsp. Oregano (dry)
- 2 Tsp Sugar
- 1 Clove Garlic (fresh)
- 1/4 Tsp Salt
- 1/8 Tsp Fresh Ground Pepper

Preparation
Step 1
Place tomatoes into pot of boiling water for 1-2 minutes. Take them out of pot and drop into bowl of ice water until cooled and you are able to handle. Using a small paring knife remove; skin, seeds, and liquid.
Finely chop tomatoes.
Place all ingredients into sauce pan. Cook on a low simmer for 2 hours until sauce thickens...stirring occasionally.
As a general rule, 1 lb of fresh tomatoes will yield 6 oz of cooked sauce. If you plan on making larger batches, just double or triple recipe as needed
Remember...a sauce tasted straight from the pan will taste very different when combined with your other pizza ingredients. Try and plan accordingly and adjust your seasonings to compliment the toppings. For example, I might add more salt to the sauce if I am planning on using a few vegetables as toppings. Because vegetables do not contain salt...I will "punch up" the sauce to compliment these toppings. In contrast, if Pepperoni is that nights topping choice I will not add additional salt because of the salt contained in the Pepperoni.
