Ingredients

  • 4 (4) bananas
  • 3/4 cup (175 mL) granulated sugar
  • 2 (2) eggs
  • 1/2 cup (125 mL) LACTANTIA® Butter,melted
  • 2 1/2 cups (625 mL) ROBIN HOOD® All Purpose Flour
  • 1 tbsp (15 mL) MAGIC® Baking Powder
  • 1 tsp (5 mL) baking soda
  • 1/2 cup (125 mL) cranberries, dried

Step 1

Preheat oven to 375 degrees F

1. MASH bananas in large mixing bowl. Add sugar, eggs and melted butter. Mix well. Combine flour, baking powder and baking soda. Stir into banana mixture with the dried cranberries, just to moisten. Spoon into 12 greased muffin cups.
2. BAKE for 20-25 minutes, or until top springs back when lightly touched.
