The taco salad has to be one of my favorite salads. This salad starts out with a tasty taco seasoned ground beef with some onions and garlic thrown in for good measure. You could easy make this salad with leftover meat from taco night but it is definitely worth making some from scratch to enjoy the salad whenever you get the craving for it. Once you have the seasoned ground beef you pretty much just need to make a salad with some of your favourite taco condiments. I usually start out with a bed of lettuce and tomatoes which I top with the beef followed by some black beans, salsa, diced red onions, sliced black olives, creamy avocado, cheddar cheese and sour cream. The final component of any taco salad is a few crumbled tortilla chips to give it the crunchy finish. This certainly is one tasty taco salad and it truly is the salad that eats like a meal!

Ingredients

  • BEEF MIXTURE:
  • 1 tablespoon oil
  • 1 small onion diced
  • 1 clove garlic chopped
  • 1/2 pound ground beef
  • 1 tablespoon taco seasoning
  • 1/4 cup water
  • ........................................
  • SALAD FIXIN'S:
  • 4 cups lettuce, sliced
  • 2 large tomatoes, diced
  • 1 cup black beans
  • 1/2 cup salsa
  • 1 avocado, diced
  • 1/4 cup sour cream
  • 2 tablespoons sliced black olives
  • 1/2 cup cheese, shredded
  • 1 handful tortilla chips, crumbled
  • Salad dressing of choice (Catalina, Ranch, etc.)

Preparation

Step 1

Heat the oil in a pan over medium heat. Add the onions and saute until tender, about 5-7 minutes. Add the garlic and saute until fragrant, about a minutes. Add the ground beef and cook draining any grease when done. Mix in the taco seasoning and water and simmer until most of the liquid has evaporated, about 3-5 minutes.

Assemble salad and enjoy!
