  • 4 boneless skinless chicken breast halves
  • 8 slices sourdough bread
  • 1 garlic clove, cut in half lengthwise
  • 4 T. Caesar salad dressing
  • 6 romaine lettuce leaves, shredded
  • 4 red onion slices, cut in half

Preparation

Step 1

1. Place 1 chicken breast half between 2 pieces of plastic wrap or waxed paper, boned side up. Working from center, gently pound chicken with rolling pin or flat side of meat mallet until 1/4 inch thick. Repeat with remaining chicken halves.
2. Place bread on broiler pan. Broil 4 to 6 inches from heat 1 to 2 minutes, turning once, or until lightly browned. Rub one side of each bread slice with cut side of garlic. Remove from pan.
3. Place chicken on broiler pan. Brush with 1 T. of the salad dressing. Broil 4 to 6 inches from heat for 5 to 7 minutes or until chicken is fork tender and juices run clear.
4. Meanwhile, in a small bowl combine remaining 3 T. salad dressing, shredded lettuce and onion; toss gently to coat. To assemble sandwiches, place 1 chicken breast half on each of 4 toasted bread slices; top each with 1/4 of lettuce mixture and bread slice.
