Chicken & Wild Rice Casserole

Ingredients
- 2 Tabs butter
- 1 medium onion, diced
- 3 cups chicken, cooked & diced
- 1 (8oz) can water chestnuts, drained & chopped
- 1 (4 oz) jar pimentos or roasted red peppers
- 1 (10 3/4 oz) cream of celery or chicken soup
- 1/2 cup or less mayonaise
- 1 (6 oz) box long-grain wild rice, cooked according to directions
- 1 cup grated sharp cheese
- pinch salt

Preparation
Step 1
Heat butter in small skillet, add onion & saute until transulent, about 5 min. Transfer to large bowl, add all remaining ingredients & mix together until thoroughly combined. Pour into a greased 3-quart casserole dish. Bake for 20 -25 minutes or until bubbly in 350^ oven.
