- Hot water
- Sour cream
- 2 bunches (or more) chopped green onions, including tops
- Butter
- Shredded Cheddar cheese
- Salt and pepper

Preparation
Step 1
Mix really hot water with 2-3 cups instant potatoes, depending on how much mashed potatoes you want. Don't make it sloppy; it should be fairly stiff.
Add enough sour cream to make it feel like mashed potatoes - not runny. Add some of the Cheddar cheese - don't be stingy. Add the green onions and butter to potato mixture plus salt and pepper and mix well. Taste for salt.
Put in casserole and top with more cheddar cheese. Bake at 350 until done - about 30 minutes.
