Tilapia with Cilantro Relish

Great in lettuce cup, as a taco, or just by itself with a salad!

Ingredients
- For relish on top:
- 4 tilapia fillets
- 1 Tbsp. vegetable oil
- 1/2 avocado thinly sliced (its under the fish, you cant see it in the pic)
- 4 lime wedges
- 1 head of boston lettuce
- 1/2 cup chopped fresh cilantro
- 1 lime, juiced
- 1 lemon, juiced
- 1 jalapeno pepper, chopped and seeded
- 1/2 onion, chopped
- Seasoning:
- 1 Tbsp. paprika
- 1 Tbsp. cayenne
- 1 Tbsp. oregano
- 10 springs of fresh thyme, leaves removed and chopped
- 1 tsp. salt

Directions
Combine all relish ingredients in a bowl, and set aside for on top of the tacos.
Heat oil in large skillet over medium heat. Combine seasoning in a bowl, and rub over fish. Cut the fish into chunks. Once oil is hot, add to pan and cook 2-3 minutes on each side or until cooked. Remove from pan and put on a paper plate with paper towel over it. It absorbs some of the oil.
Take approximately 10 lettuce leaves, and fill them with the cooked fish, spoonful of the onion mixture, and a couple thin slices of avocado. Serve with lime wedges.
**You can replace the lettuce leaves with low carb tortillas if you want, but the carb count will be more.
