Garlic Potato Casserole

Ingredients
- 10 medium potatoes, peeled and cooked tender (Yukon Gold or white rose potatoes recommended)
- 8 ounces sour cream
- 8 ounces cream cheese, softened
- 1/4 tsp garlic powder
- 4 ounces butter, melted
- 1 tbsp chopped chives
- Salt, to taste
- Pepper, to taste
- 1 tsp paprika
- 1 1/2 tbsp grated Parmesan cheese, optional
- 4 slices crumbled veggie bacon

Step 1
Cook, drain and mash potatoes. Add sour cream, cream cheese, garlic powder, salt, pepper and 1/4 cup melted butter. Beat with beater until smooth.
Spray an 8-by-10-inch pan with cooking spray. Spoon potatoes in pan and pour remaining melted butter on top. Sprinkle with paprika. Bake at 350 F for 1 hour. If desired, sprinkle with Parmesan cheese or crumbled veggie bacon 10 minutes before finished cooking.
