Ingredients
- 1 5lb whole chicken
- 2 - 3 cloves of garlic, sliced
- 2 Tbsp parsley, bunched & chopped
- 1 tsp tarragon or rosemary
- 1 tsp oregano and basil, optional
- 3 - 4 lemon slices
- salt and pepper to taste

Preparation
Step 1
Wash and pat dry the chicken. Slice the garlic thin, and place several pieces under the skin of the chicken. In the cavity, place the remaining garlic, lemon slices, and bunched parsley. Brush olive oil on the skin of the chicken, and place the chicken in a roasting pan. Sprinkle with salt, pepper, tarragon and chopped parsley.
Roast in a 350 deg oven for 1 hour, or until juices run clear.
Serves 4.
