Ingredients

  • 1 cup chopped celery
  • 3/4 cup chopped green pepper
  • 3 cloves garlic, minced
  • 3 tbsp. chopped parsley
  • 5 green onions, chopped
  • 1 large onion, chopped
  • 1/2 cup olive oil
  • 2 cups long grain rice, uncooked
  • 2 (4 oz.) cans sliced mushrooms, drained
  • 4 cups hot chicken broth
  • 1 1/2 cups finely chopped cooked chicken
  • 1 cup finely chopped almonds, toasted
  • 1 tbsp. salt
  • 1 tsp. black pepper
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. poultry seasoning

Preparation

Step 1

Saute vegetables in olive oil until tender; add remaining ingredients. Pour into a lightly greased 3 qt. casserole. Cover and bake at 250 for 1 hour and 15 minutes
Yield: 8-10 servings
