Molasses Sandwich Cookies

Ingredients
- Cookies:
- 1 1/2 * 1 1/2 cups all-purpose flour (spooned and leveled)
- 1/2 * 1/2 tsp baking soda
- 1 * 1 tsp cinnamon
- 1/2 * 1/2 tsp salt
- 1 * 1 cup packed brown sugar
- 1/2 * 1/2 cup (t1 stick) unsalted butter, room temperature
- 1 * 1 large egg
- 1/4 * 1/4 cup light unsulfured molasses
- Creamy molasses filling:
- 12 * 12 Tbs (1 1/2 stick) softened unsalted butter
- 3 *3 Tbs light unsulfured molasses
- 2 *2 cups powdered sugar

Preparation
Step 1
1.Preheat oven to 350
2. In large bowl, whisk together flour, baking soda, cinnamon, and salt; set aside
3. In a large bowl, with electric mixer, beat sugar and butter until combined
4. Beat in egg, then molasses, until smooth
5. On low speed, gradually add flour mixture until dough forms
6.Drop rounded teaspoonfuls of dough onto 2 greased (or parchment lined) baking sheets, about 1 1/2" apart
7. Bake until centers are dry to the touch, about 12-15 minutes
8. Rotate pans from top to bottom and front to back half-way through
9. Cool 1 minute on baking sheet
10. Transfer to cooling rack
11.Spread a rounded teaspoonful of Creamy Molasses Filling on the flat side of cookie; place another on top, gently press
Creamy Molasses Filling:
Whisk 12 Tbs (1 1/2 stick) softened unsalted butter with 3 Tbs light unsulfured molasses until smooth
Gradually whisk in 2 cups powdered sugar; whisk until smooth and spreadable
