Ingredients
- 1 cup goat cheese
- 1 tsp dried italian herbs
- 1 tsp chopped fresh Italian parsley
- 6 boneless, skinless chicken breasts
- 4 cloves chopped garlic
- 1/2 c chopped sun dried tomatoes
- 1 cup heavy cream
- 1/4 c olive oil

Step 1
Mix goat cheese, herbs and parsley; season with salt and pepper. Make a slit down the side of the chicken breasts, creating pockets. Spoon a layer of cheese mixture inside each breast. Season with salt and pepper. In a saute pan over med-high heat, heat oil; cook chicken, turning once, 6 minutes each side. Remove chicken. Add garlic, tomatoes and cream to pan. Scrape all bits off bottom of pan. Bring to a boil; simmer 5 minutes. Spoon sauce over chicken.
