Country Breakfast Casserole

A small bag of frozen seasoned hash brown potatoes can be used instead of potatoes, onion and sweet peppers.

Ingredients
- 1 T veg. oil
- 4 potatoes, diced
- 1 sweet red pepper, diced
- 1 green pepper, diced
- 1 onion, minced
- 1 1/2 cup egg substitute
- 1 cup milk
- 2 T all purpose flour
- 1/4 t pepper
- 4 oz shredded Cheddar cheese
- 8 oz. pkg breakfast link sausage, chopped

Preparation
Step 1
Heat oil in med. skillet. Fry potatoes in oil until golden. Add red and green peppers and onion.
Mix egg substitute, milk, flour, pepper, cheese and sausage together in mixing bowl.
Fold in hot potato mixture.
Coat a 12"x8" baking dish with non stick cooking spray.
Pour potato mixture into baking dish.
Bake at 350 for 45 minutes.
