Ingredients
- • 12 Ozs – Any type of Fettuccini
- • ½ Cup – Part-skim Ricotta Cheese
- • ½ Cup-Plain Low Fat Yogurt
- • ½ Cup – Grated Romano Cheese
- • 1 Tablespoon-Unsalted Butter (Melted)
- • Freshly Ground Black Pepper (To taste)
- • Fresh Parsley (Chopped)

Preparation
Step 1
Cook the pasta according to package directions, omitting the salt. Drain well, reserving approx ½ cup of the cooking liquid and return pasta only to the cooking pot.
In a food processor or blender, combine ricotta cheese, yogurt, Romano cheese, and butter. If mixture is too thick, add a little of the cooking liquid or some fat-free half & half, if desired. Add the cheese mixture to the cooked fettuccini and toss to coat. Add fresh ground black pepper and sprinkle with parsley and a little additional grated cheese. Serve immediately.
