Ingredients
- 2 tablespoons olive oil
- 1/2 cup chopped onions
- 1-2 large garlic clove minced
- 1 can 28 oz crushed tomatoes
- 2 tsp parsley
- 1/2 cup vodka
- 1/2 tsp red pepper
- 1/2 cup heavy cream
- Salt and pepper to taste
- Parmesan cheese
- prociutto *optional
- can add peas/basil if you like

Preparation
Step 1
1- Heat oil and Sautee onions for 5 minutes.
2- Then add garlic & prociutto* and Sautee for another minute.
3- Add vodka, tomatoes and red pepper and simmer.
until sauce reduces 15-30 minutes.
4- Stir in cream, parsley until thick, 5 minutes.
5- Add a few tablespoons of parmesan cheese to sauce and stir.
* you can add more cream if you like the sauce lighter.
* another technique i haven't tried is to pour the cream into a mixing bowl and whip with a hand mixer until peaks form. Fold it gently into the tomato sauce.
