Ingredients
- 1 1/2 lbs trimmed, green cabbage, thinly shredded into 1/4" strips
- 1 cup red onion, finely sliced into half-moons
- 1 cup coarsely shredded carrots
- 1/4 cup sugar
- 2 tbsp sea salt
- 1/2 cup mayonnaise
- 1 1/2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1/2 tsp freshly ground black pepper

Preparation
Step 1
Combine the cabbage, onion and carrot, in a bowl with enough room to toss. Add the sugar and salt and toss while massaging the cabbage gently until it begins to feel wet. Let sit for 10 minutes, then transfer to a large colander and rinse well under cold running water and squeeze out the water with your hands. In batches, place the mixture in a salad spinner and spin dry. Transfer back into the bowl and set aside. Blend the mayonnaise, vinegar, mustard and pepper together. Toss with the slaw mixture until coated. Adjust to taste with additional salt, pepper, sugar and vinegar, if desired.
