Mrs. Field's Macadamia Nut Coconut Crisps

I wouldn't call this recipe evil...unless you are talking about the price of Macadamia nuts. When I feel like splurging, this is THE recipe I go for. Makes 36 cookies

Ingredients
- 1 cup all-pupose flour
- 1 cup (4 oz.) raw macadamia nuts, coarsley chopped
- 1/2 cup shredded sweetened coconut
- 1/2 cup salted butter, softened
- 1/2 cup light corn syrup
- 1/2 cup dark brown sugar, firmly packed
- 2 teaspoons pure vanilla extract (this is a must...no imitation)
- 1/3 cup mini semisweet chocolate chips

Step 1
Preheat oven 375*.
1. Whisk together flour, nuts, and coconut in a medium bowl. Set aside.
2. Heat butter, corn syrup, and brown sugar in a 2-quart saucepan until boiling, stirring occasionally. Remove saucepan from heat and stir in vanilla.
3. Add flour mixture and chocolate chips, and mix until all ingredients are equally distributed.
4. Drop by half tespoonfuls onto well-greased cookie sheets, 2 inches apart. Bake 8-10 minutes or until mixture spreads and bubbles.
5. Cool cookies for 1 minute on pan, then immediately transfer to a cool, flat surface with a metal spatula. Cookies will remain soft until completely cooled.
I like to add to this by making a chocolate glaze that I dip half of each cookie in. (This is Mrs. Fields recipe, but I don't like to be out done, hence the chocolate addition.)

Chocolate Glaze:
1/4 cup heavy cream
1 cup semisweet chocolate chips
2 teaspoons light corn syrup
Scald the cream in a small saucepan, then remove from heat. Stir in the chips and corn syrup, cover and let stand for 15 minutes. With a small wire whisk or wooden spoon, gently mix glaze until smooth, being careful not to create bubbles in the chocolate.
When the cookies are completly cooled, dip half of the cookie in the chocolate. Place on a waxed paper lined cookie sheet and refrigerate about 10 minutes to set the chocolate.
These are very good and , if it was my mom getting out of the hospital, these are a perfect celebration cookie. Give her my best, I know how she feels. I just got out a month ago.
