Ingredients

  • 1 tbsp olive oi, plus more for serving if desired
  • 1 small onion, chopped
  • 2 tbps tomato paste
  • 1 tl. sugar
  • 1/8 t. salt
  • 1 (14.5 oz) can low-sodium chicken broth
  • 1 (28oz) can diced tomatoes in juice
  • 1 garlic clove peeled
  • 2 large basil sprigs, leaves coarsely torn (1c) and stems reserved
  • 2 oz dry small whole-wheat pasta (such as rotini, shells, or broken-up spaghetti)

Preparation

Step 1

Heat oil in a medium saucepan over medium ehat. Add onion; cook,stirring occasionally until tender, 5-7 minutes. Stir in tomato paste, sugar, and salt; cook 2 minutes. Stir in chicken broth, tomatoes and their juice, garlic, and basil stems, bring to a boil over high heat. Add pasta; reduce heat to medium and simmer until pasta is tender and flavors are blended, about 10-12 minutes. Remove garlic clove and basil stems; discard. Serve pasta topped with basil leaves and a drizzle of olive oil.
