Ingredients
- 1/3 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 tea. vanilla
- 2 cups flour
- 1 1/2 tea. baking powder
- 1/2 tea. baking soda
- 1/2 tea. salt
- 1/4 tea. ground ginger
- 1/4 tea. ground nutmeg
- 1/2 cup orange juice
- 1 cup chopped fresh or frozen rhubarb
- 1/2 cup slivered almonds
- 2 tea. grated orange peel

Step 1
In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
Combine flour, baking powder, baking soda, salt, ginger and nutmeg; add to creamed mixture alternately with orange juice. fold in the rhubarb, almonds and orange peel.
Transfer to a greased 9x5 loaf pan. bake at 350 degrees for 55-65 minutes or until a toothpick cones out clean. Cool for 10 minutes before removing from pan to a wire rack.
