2 medium sweet potatoes
1 Tablespoons olive oil
1 Tablespoon honey
1 teaspoon lemon juice
Salt & pepper

Preparation

Step 1

Peel and cut the sweet potatoes into 1-inch pieces and put in a baking dish. Whisk together olive oil, honey and lemon juice. Pour mixture over potatoes and toss to coat. Sprinkle with the salt and pepper. Roast in 400 degree oven until potatoes are tender, about 45 minutes. Stir several times.
