Ingredients
- 2 * 2 6-ounce salmon filets
- 2 * 2 Anaheim peppers, stemmed and seeded
- 1 * 1 small Poblano pepper, stemmed and seeded
- 10 * 10 ounces orange segments
- 1 * 1 teaspoon olive oil
- * Cajun seasoning to taste

Step 1
* Roast your peppers in an oven, preheated by 350 degrees, by setting them on a baking dish with 1 teaspoon olive oil, coated. Bake about 20 minutes, or until skins begin to blister.
* Remove from heat and chop. Mix with orange segments and mix well. Set aside.
* Preheat grill to medium heat.
* Season salmon filets with Cajun seasonings and grill about 5-6 minutes, then flip and grill an additional 2-3 minutes, or until salmon is cooked throughout, no longer pink in the middle.
* Transfer salmon to serving plates and top with oranges-pepper combination.
* Serve!
