Jan's Pastry Crust

Ingredients
- 2 1/4 cups flour
- 1 tsp salt
- 3/4 cup Crisco
- 7-8 Tblsp ice cold water

Preparation
Step 1
Mix flour, Crisco, and salt together with pastry blender until finely crumbled. Add water and knead dough just until blended and easily workable with hands.
Divide dough in half. Using 2 sheets of wax paper or a zippered pastry bag, roll dough out in 11-12" circle then transfer to 9" greased pie plate. Prick several holes in bottom with fork. Trim dough around edge of plate leaving about 1/8" hanging over the side of plate. Add pie filling of choice. Dot with butter.
Repeat process for top crust. Place on top of filling and trim around edge of pie plate leaving an overhang again. Turn edge of top crust under and tuck under bottom crust edge. Crimp dough between thumb and pointer finger all the way around the pie plate. Make a few slits in top crust and dust with sugar.
Bake at 450 degrees for 10 minutes then turn oven down to 350 degrees for 45-50 minutes or until crust is golden brown.
Depending on type of pie filling being used you may want to place a sheet of aluminum foil on rack underneath pie plate to catch the overspill.
