Chewy Chocolate Chunk Cookies

Ingredients
- 1 1/3 cups cold, unsalted butter
- 1 1/2 cups packed light brown sugar
- 1 cup granulated sugar
- 2 large cold eggs
- 1 tablespoon vanilla
- 3 3/4 cups all-purpose flour
- 1 1/4 teaspoon salt
- 1 teaspoon baking soda
- 12 ounce chocolate chunks

Preheat the oven to 375 degrees.
In a stand mixer fitted with the paddle attachment, beat the butter and both sugars, starting on low speed, and gradually working your way up to high speed, until the mixture is light and fluffy. It should take about 3 minutes once you hit high speed. Scrape the bowl and beater. Add the eggs, one at a time and the vanilla. Mix until just blended.
In a medium bowl, whisk the flour, salt and baking soda. Add this to the butter mixture and stir with a wooden spoon until just blended; the dough will be stiff. Stir in the chocolate chunks.
Drop by rounded teaspoonfuls about 2 inches apart on parchment lined cookie sheets. Refrigerate any unused dough.
Bake until the bottoms of the cookies are golden brown, 8 to 10 minutes. Remove the cookies sheets from the oven and let them sit for 3 to 5 minutes, then transfer the cookies to a rack to cool completely. Let the cookie sheets cool completely before baing the remaining dough.
