Seafood Casserole

Ingredients
- 2 cups Ritz crackers (crumbled)
- 1/2 to 3/4 stick butter
- 2 lbs. scallops
- 1 lb. shrimp cooked and deveined
- 1 lb. crab meat
- 1 can cream of mushroom soup

Step 1
Melt butter, add to crumbs, mix scallops, shrimps and crab meat with undiluted soup. In 9 x 13 or larger casserole put half of crumbs mixture and pat down. Add scallops, shrimp and crab meat mixture. (spoon it on.) Top with remaining crumbs. Bake at 350 degrees for 45 minutes.

MY NOTES: Instead of using cream of mushroom soup, try this white sauce instead, flavored with sherry...
1/3 C. butter or margarine
1/3 C. flour
2/3 C. chicken broth
2/3 C. whipped cream
3/4 C. shredded Swiss cheese
2 1/2 Tbsp. dry sherry
Pinch of cayenne
1/2 tea. salt
1/8 tea. ground white pepper
2 Tbsp. grated Parmesan cheese
Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 min., stirring constantly. Gradually add broth and cream; cook over med. heat, stirring constantly, until mixture is thickened and bubbly. Add Swiss cheese, sherry, salt and pepper, stirring until cheese melts. Remove from heat; add seafood, stirring gently. Spoon mixture into a lightly buttered casserole or several ramekins. Sprinkle with Parmesan cheese or us the buttered Ritz cracker crumbs from original recipe. Bake, uncovered, at 350 degrees F for 20 min. or until thoroughly heated. Broil 6 in. from heat 6 min. or until lightly browned. Garnish with parsley.
