Ingredients

  • 1/2 bushel or 30 lbs. tomatoes, peeled, halved and seeded
  • 3 lbs. onions, chopped
  • 1 to 2 c. oil
  • 1/2 c. sugar
  • 1/2 c. canning salt
  • 2 T. dried oregano
  • 2 T. dried basil
  • Optional: minced garlic and sweet & hot peppers to taste
  • 4 12-oz. cans tomato paste
  • 20 T. lemon juice
  • 10 1-quart canning jars and lids, sterilized

Preparation

Step 1

In a large stockpot, mix together all ingredients except tomato paste. Bring to a boil over medium heat. Reduce heat to low; simmer for one hour. Add tomato paste; return to a boil.

Add 2 tablespoons lemon juice to each hot sterilized jar. Spoon sauce into jars, leaving 1/4-inch headspace. Wipe rims; secure with lids and rings. Process in a boiling water bath for 40 minutes. Set jars on a towel to cool completely; check for seals.

Makes 9 to 10 jars.
