- Hollandaise Sauce
- 1/4 cup butter
- 2 egg yolks
- 1/4 tsp salt
- 1/2 tbsp lemon juice (a little less then 1/2 tbsp)
- 2 tbsp cream

Preparation
Step 1
Poach eggs (grease poacher), butter muffins and cook Canadian bacon, sprinkle salt and pepper.
Melt butter in saucepan.
Combine egg yolks, salt and lemon juice in small blow and mix well.
Use low heat and add egg yolk mixture to butter, stir rapidly until consistency of light cream.
Add cream stir until consistency of white sauce.
Put bacon over muffin, then egg, salt and pepper then sauce.
