  • 1/2 cup  panko bread crumbs
  • 1/2 cup  grated Parmesan (2 ounces)
  • 2 tablespoons  olive oil
  • 1 tablespoon  dried oregano
  • kosher salt and black pepper
  • 1 1/2 pounds  beefsteak tomatoes, sliced 1/2 inch thick

Heat oven to 350° F. In a small bowl, toss together the panko, Parmesan, oil, oregano, ¾ teaspoon salt, and ¼ teaspoon pepper.

Place the tomatoes in a baking dish, overlapping them slightly. Sprinkle with the panko mixture and bake until golden brown,
20 to 25 minutes.
