Ingredients

  • 2 pounds total combination ham, prosciutto & salami - cubed
  • 1/2 pound provolone - cubed
  • 1 pound mozzarella - cubed
  • 3 pounds ricotta
  • 12 eggs beaten
  • 1/2 cup grated cheese
  • pepper
  • 3 tablespoons chopped fresh parsley
  • 1 egg for egg wash

Preparation

Step 1

Pre heat oven to 350

In large bowl mix ricotta, eggs, grated cheese, pepper & parsley once combined add meats & cheese. Mix until well incorporated.

Recipe makes either 4 deep-dish pies or 1 large 9 ½ x12x3 baking dish

For large pan you can either make pastry for the bottom or buy Pillsbury roll out piecrust & roll to fit in bottom of pan. For top of large pan or pie pans take roll out piecrust & cut into strips to make lattice pattern. Brush tops with eggwash & make for 1 hour or until golden & firm.

Original recipes calls for pizza dough for the bottom of the large baking dish & then another pizza dough for the top. We like it better with the pie crust large baking
