Coffee Ice Cream Pie

Ingredients

• 1 1/2 c. crushed cream-filled choc. sandwich cookies, divided
• 1/4 c. butter, melted
• 2 pints coffee ice cream, softened
• 1 c. mini marshmallows
• 1 c. mini semisweet choc. chips
• 2 c. whipped topping
• 2 tbsp. caramel ice cream topping
• 2 tbsp. hot fudge ice cream topping, warmed
• additional cream-filled cookies to decorate

Preparation

Step 1

In a small bowl, combine 1 1/4 c. crushed cookies and butter. Press onto bottom and up the sides of a 9" pie plate. In a large bowl, combine the ice cream, marshmallows, choc. chips, and remaining crushed cookies. Spoon into crust. Freeze for 30 mins.

Spread whipped topping over pie. Alternately pipe thin lines of caramel and choc. topping over pie; gently pull a toothpick or sharp knife through lines in one direction.

Cover and freeze overnight. May be frozen up to 2 months. Remove from freezer 10-15 mins. before cutting. Garnish w/ cookies if desired.
