Bread Machine Pizza Dough

This Williams-Sonoma recipe yields enough for two 12-inch pizzas.

- 1 cup warm water (105° to 115°F)
- 2 Tablespoons olive oil
- 1 tsp. salt
- 3 cups unbleached all-purpose flour
- 1 Tablespoon active dry yeast

Preparation
Step 1
In the bread pan of an electric bread machine, combine the warm water, olive oil, salt, flour and yeast. Set the machine for Pizza Dough according to the manufacturer's instructions and process through the cycle.
Transfer the dough to a lightly floured work surface. Punch down the dough and divide in half. Form each half into a ball and cover with a clean kitchen towel. Let the dough rise in a warm place until doubled in size, about 40 minutes. Roll out as directed in the pizza recipe.

• for thick-crust pizza: with lightly floured hands, press the dough into a greased 12-inch pizza pan, forming a high edge. Brush the crust with oil, cover the dough with a clean towel, and let stand for 15 minutes. Spoon tomato or pizza sauce over the dough, top with desired toppings, and bake for 25-35 minutes, or until filling is bubbly and crust is golden.
• for thin-crust pizza: with lightly floured hands, shape the dough into a ball, then divide it in half. Press each half into a greased 12-inch pizza pan, forming a 1-inch edge. Brush the crust with oil, cover with a clean towel, and let stand for 15 minutes. Spoon tomato or pizza sauce over the dough, top with desired toppings, and bake for 20-30 minutes, or until filling is bubbly and crust is golden.
