Brined and Smoked Pork Ribs

These ribs are moist, tender and flavorful. This recipe makes enough ribs for a large party

Ingredients
- 10 Ribs (in 4 catering trays)
- Stir together until dissolved
- 4 C Hot Water
- 2 C Salt
- 4 C Brown Sugar (packed)
- 2 1/4 c white sugar
- 1/2 c Molasses
- 2 T Pepper
- 6 T Grill Seasoning (BBQ 3000 from penzey spice)
- Stir in 1 Gallon Apple Juice
- Add 6 cups ICE to cool

Step 1
Pour brine over ribs seal w/ Foil and brine for up to 24 hours but at least overnight.
Rotate ribs top to bottom at least once
Rinse in cool water and pat dry w/ paper towels
Lightly coat w/ Olive oil & Season w/ onion powder, garlic powder and Italian season (or bouquet garni)
Smoke in smoker for 6 plus hours at 200 degrees (after smoking this point you can refrigerate or freeze until you are ready to use)... If you don't have a smoker, you can cook in the oven on low heat (300) for 4 hours with beer in the bottom of the pan, covered with foil.
Cook on BBQ until just bubbly and lightly browned
You can put whatever BBQ sauce you like on the last bit on BBQ which keeps the sauce from burning
