Ingredients
- 1/2 cup sour cream, creme fraiche, or heavy cream
- 1 to 2 Tbsp. freshly grated horseradish or jarred horseradish (not the creamy variety)
- Salt and freshly ground black pepper

Preparation
Step 1
If using heavy cream, beat it lightly first to thicken it so you can dollop it onto things. In a small bowl mix whichever cream you're using and the horseradish. Add salt and pepper to taste. Use to garnish soups, top savory pancakes, or serve alongside roasted beef or grilled steaks.
Keep, covered and chilled, up to 2 days.
Makes 1/2 cup Horseradish Cream.
