Blue Potato Salad

Ingredients
- 2 lbs red potatoes, sliced 1/2" thick
- 3/4 cup blue cheese, crumbled
- 1/2 cup mayonnaise
- 1/2 cup celery, diced
- 1/3 cup sour cream
- 1/4 cup white wine vinegar
- 1/4 cup chopped fresh parsley

Preparation
Step 1
Boil potatoes in a large pot of salted water until tender, either on stovetop, or in a covered microwave casserole, about 10 minutes either way. Drain.
Whisk remaining ingredients together in large bowl. Add hot potatoes and toss to coat. Serve warm or at room temperature.
For a variation, try using applewood smoked blue cheese, and top salad with crumbled bacon.
