Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 6 TB butter, softened
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 egg white
  • 1 1/3 cup low-fat buttermilk
  • 2 cups fresh blueberries

Preparation

Step 1

1. Preheat oven to 350.
2. Combine flour, baking powder, baking soda and salt. Stir with whisk.
3. Beat sugar and butter at medium speed until well blended. Add vanilla and eggs. Beat well. Add flour mixture and buttermilk alternatively ending with flour.
4. Spoon half mixture into greased 9" round cake pan. sprinkle with 1 cup blueberries. Spoon remaining batter on top and sprinkle with remaining blueberries. sprinkle some sugar on top.
5. Bake about 50 minutes or until toothpick comes out clean from center. Cool in pan on wire rack for at least 20 minutes, then remove from pan.
