Ingredients

  • Glaze:
  • 2-1/4 cups all-purpose flour
  • 1-1/4 cups packed brown sugar
  • 1/2 cup margarine or butter (1 stick) softened
  • 1-1/2 teaspoon baking powder
  • 1-1/2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 3/4 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 large egg
  • 1-1/2 cups loosely packed shredded carrots
  • 3 oz. pecans
  • Citrus glaze
  • 3/4 cup confectioners sugar
  • 2-1/2 teaspoons lemon juice
  • 1/4 teaspoon vanilla extract

Preparation

Step 1

In large bowl measure first 10 ingredients and 1/4 cup water. With mixer on low speed, beat ingredients until well blended, occasionally scraping bowl with rubber spatula. stir in carrots and nuts until well mixed. Preheat oven to 350 degrees.

Drop dough by rounded tablespoons, about 1" apart, unto ungreased large cookie sheet, flatten slightly. Bake cookies 20-25 minutes until cookies are lightly browned but still soft in center. Remove cookies to wire rack to cool. When cookies are cool drizzle glaze over cookies, let dry 30 minutes.

Glaze:

Mix 3/4 cup confectioners sugar, 2-1/2 teaspoons lemon juice, and 1/4 teaspoon vanilla extract until smooth.
