Ingredients
- 2 large eggplants - cubed (about 1/2 in)
- 4 celery stalks (coarsly chopped)
- 1 large can diced tomatoes
- 1 can sliced & pitted black olives
- 1 bottle sliced green olives with pimentos
- 1 small bottle mini capers
- 1 small can tomato sauce
- 1 Tb. minced garlic
- 1/2 c. red wine vinegar
- 1/4 c. olive oil
- Salt & Pepper to taste

Preparation
Step 1
Step 1: Sautee Eggplant, celery & capers in Olive Oil until softened.
Step 2: Add all other ingredients & simmer about 1 hour.
Step 3: Serve hot, room temperature or cold with your favorite Italian Bread
