I liked this quite a bit, although Dan didn't care for the mint. I wouldn't make it without fresh peas, however.

PEA **** Mint Pea Salad - 2 Points 1 Picture

Ingredients

  • 1 cup fresh shelled peas
  • 2 scallions, thinly sliced
  • 1/4 cup plain yogurt
  • 1 1/2 tablespoons mayonnaise
  • Juice and zest of 1/2 lemon
  • Coarse salt
  • Freshly ground black pepper
  • 4 tablespoons mint, chopped fine
  • 4 slices crisp cooked bacon, crumbled

Preparation

Step 1

* Bring a saucepan of salted water to a boil. Blanch peas for about 1 minute, rinsing in ice water so that they remain bright green and crisp. Drain and set aside to dry.

* In a medium bowl, mix yogurt with mayonnaise, lemon zest and juice, salt and pepper, and fold in remaining ingredients. Refrigerate covered.
