This simple Italian dressing recipe uses a very easy method for achieving perfectly emulsified vinaigrette. The tiny dash of Dijon, when shaken, keeps the oil and vinegar mixed together for a restaurant-quality salad dressing.

Ingredients
- 1/2 cup red wine vinegar
- 1 1/2 cups olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon freshly ground black pepper
- 1 tsp dried Italian herb blend
- 1 tsp Dijon mustard
- 1 clove crushed and finely minced garlic

Preparation
Step 1
Combine all ingredients in a glass jar with a screw-on lid, or other container with a tight-fitting lid. Tighten lid and shake vigorously for 1 minute before serving. Refrigerate overnight for best results. Shake before serving. May be stored for several weeks in the refrigerator.
