Ingredients
- 1 pint grape tomatoes, halved
- salt and pepper
- 4 scallions, sliced thin
- 1 garlic clove, minced
- 1 Tbs grated zest and 1/3 cup juice from 3 limes
- 1/4 cup olive oil
- 2 poblano chiles, seeded and sliced into 2-inch matchsticks
- 2 ripe avocados, pitted, skinned and cut into 1/2-inch pieces
- 1/4 cup finely chopped fresh cilantro

Preparation
Step 1
1. Toss tomatoes and 1/2 tsp salt in medium bowl. Transfer to paper towel-lined baking sheet and let drain 15 minutes.
2. Combine scallions, garlic, lime zest, lime juice, 1/2 tsp salt and 1/2 tsp pepper in large bowl. Let sit 5 minutes, then slowly whisk in oil.
3. Add chiles, avocados, cilantro and drained tomatoes to the bowl with dressing and toss to combine. Season with salt and pepper to taste.
