- 1/2 small onion
- 2 tablespoons garlic
- olive oil
- 1 can tomato - diced
- 1 medium eggplant - cubed
- cheese tortollini
- pepper
- italian seasonings

Preparation
Step 1
Sautee onion and garlic in olive oil.
Add eggplant, stirring until soft.
Add olive oil as needed.
Add diced tomatoes.
Add pepper and italian seasonings to taste.
Serve over cheese tortollinis.
