Slow Cooker Pepper Steak II 1 Picture

Ingredients

  • 1 1/2 lbs boneless beef round steak
  • 2 medium onions, cut into 1/4-inch slices
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon finely chopped gingerroot or
  • 1/4 teaspoon ground ginger
  • 1 cup beef flavored broth (from 32-oz carton)
  • 3 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • 2 medium green bell peppers, cut into 3/4-inch strips
  • 2 medium tomatoes, cut into eighths
  • 6 cups hot cooked rice

Step 1

Remove fat from beef. Cut beef into 6 serving pieces. Spray 12-inch skillet with cooking spray; heat over medium-high heat. Cook beef in skillet about 8 minutes, turning once, until brown.

In 3- to 4-quart slow cooker, layer beef, onions, garlic and gingerroot. In small bowl, mix broth and soy sauce; pour over beef.

Cover; cook on Low heat setting 7 to 9 hours or until beef is tender.

In small bowl, mix cornstarch and water; gradually stir into beef mixture. Stir in bell peppers. Increase heat setting to High. Cover; cook 10 to 12 minutes or until slightly thickened. Stir in tomatoes. Cover; cook about 3 minutes longer or just until tomatoes are thoroughly heated. Serve over rice.

Reduced-sodium soy sauce can be used to trim the sodium.

Garlic and gingerroot can be purchased chopped in jars. Use 1/2 teaspoon chopped garlic when a recipe calls for a clove of garlic. Store jarred garlic and gingerroot in the refrigerator.

This slow cooker version has the same pretty color as a stir-fry Pepper Steak. Stirring in the tomatoes at the end helps keep their shape and texture.

This recipe is FANTASTIC!!! It was easy to prepare and my whole family loved it, even my picky husband who isn't a fan of onions or peppers. I left out the ginger and it didn't make a difference at all because the soy sauce made up for it. The only thing that I would change would be adding more fluids to it to increase the juices in the final product. It was still fantastic though. It is in my recipe box forever now and I have already passed the recipe on to a few of my friends.

This dish was very easy to make. I followed the recipe but omitted the tomatoes. The steak pulled apart and the flavor was outstanding. My husband and I loved it. We will have this again. Next time I will try to serve it inside tortilla shells instead of over rice.

Oh My Goodness...This was the best dinner I have ever made. It was TOO good! I followed the recipe exactly as shown, except I only used 1 onion instead of 2. I cooked it for 7 hours 15 minutes before adding the peppers, then 7 more and the tomatoes. I served it with fried white rice. This is going to be a regular around my house, it's already in high demand and we just finished dinner 15 minutes ago!

This was easy to fix but We really werent really excided about it.
