Zucchini Flan with Fonduta Cheese Sauce 0 Picture

Ingredients

  • Fonduta Sauce:
  • Zucchini (about 3 large or 6 to 7 small) or 2.2 lbs spinich
  • 1/3 cup parmesan chesse
  • pinch of nut meg
  • 9 oz cream
  • 2 tbsp buttrer
  • 1 clove garlic
  • 3 eggs
  • salt and pepper
  • 1 cup cream
  • 2 tbsp butter
  • 6 oz Tumi or Gorgonzola
  • alteernate:
  • 1 cup whole milk
  • 6 oz fontina
  • 3 egg yokes

Preparation

Step 1

Preheat oven to 300 degrees

1.Cook Zucchini whole (6 to 7small) like potatoes from cold water until fork tender

2. Cool zucchini and cut into 1/4 inch cubes

3. place 1 clove garlic and zuchini in olive oil and butter and saute until almost dry

4. remove garlic clove and place sauted zucchini in wine chiller

5. puree with hand mixer

6 add 3 eggs plus 1/3 cup parmesan, pinch of nutmeg and salt and pepper

7. puree again with hand mixer

8. Butter ramikins and place mixture in ramikins about 3/4 way up



9. place in a 1/2 " water bath about 1/2 way up ramikin

10. place in preheated 300 degrtee oven for 30 minutes

11. check with toothpick

Cover with fonduta before serving


Sauce:

1.heat cream until scalding

2. place butter and cheese in bowl

3. poor scalding cream or milg over cheese and butter and mix until smooth. tasta and add more butter if necessary

Aalternative:

1.Scald milk

2. mix egg yokes and cheese

3. pour milk over mixture and mix until smooth
