Chocolate Tiramisu Cupcakes

Ingredients
- frosting:
- 1 pkg. (18 1/4oz) choc. cake mix
- 1 1/4 c. water
- 3 eggs
- 1/3 c. veggie oil or melted butter
- 2 tbsp. instant espresso powder
- 2 tbsp. brandy (optional)
- 8 oz mascarpone cheese or cream cheese
- 1 1/2 - 3/4 c. powdered sugar
- 2 tbsp. coffee flavored liqueur
- 1 tbsp. unsweet cocoa powder

Step 1
Preheat oven to 350. Line 30 standard muffin pan cups w/ paper baking cups.
Combine cupcake ingredients in lg bowl; beat w/ electric mixer at low speed 30 sec. Beat at med. speed 2 mins.
Spoon batter into prepared muffin cups 2/3 full. Bake 20-22 mins. or till toothpicks come out clean. Cool in pans on wire racks 10 mins. Remove cupcakes to racks; cool completely.
For frosting, combine mascarpone cheese and 1 1/2 c. powdered sugar in lg bowl; beat w/ electric mixer at med. speed till well blended. Add liqueur; beat till well blended. If frosting is too soft, beat in additional powdered sugar or chill till spreadable.
Frost cooled cupcakes with frosting. Place cocoa in strainer; shake over cupcakes. Store at room temp. up to 24hrs. or cover and refrigerate for up to 3 days before serving.
