Ingredients

  • 8 c. green tomatoes, peeled, cored and chopped
  • 2 c. green pepper, chopped
  • 2 c. onion, chopped
  • 3 c. sugar
  • 2 c. white vinegar
  • 1/4 c. canning salt
  • 1-1/2 oz. jar pickling spice
  • 7 1-pt. canning jars and lids, sterilized

Preparation

Step 1

Mix first 6 ingredients in a stockpot. Place spice in a small cheesecloth bag and add to pot. Simmer over medium heat for 30 minutes, stirring occasionally. Discard spice bag. Spoon mixture into hot sterilized jars, leaving 1/2-inch headspace. Remove air bubbles; wipe jar rims. Cover at once with metal lids and screw on bands. Process in a boiling water bath for 10 minutes. Set jars on a towel to cool; check for seals.

Makes about 7 jars.
