Ingredients

  • 1 oz plain chocolate, chop into small pieces
  • 1/2 c unsalted butter, room temp.
  • 1 T instant coffee powder
  • 5 eggs separated
  • 1 c sugar
  • 1 c flour
  • 2 t ground cinnamon
  • Sauce
  • 4 ripe bananas
  • 3 T fresh lemon juice
  • 3/4 c whipping cream
  • 1 T rum (opt.)

Step 1

Preheat oven 350*. Grease 8" round cake tin. Combine chocolate & butter in top of double boiler. Stir until melted. Remove from heat and stir in coffee. Set aside. Beat egg yolks with granulated sugar and thick and lemon-colored. Add chocolate mixture and beat on low speed until just blended. Stir the flour and cinnamon together in bowl. In another bowl beat egg whites til stiff peacks. Fold a dollop whites into chocolat emix to lighten. fold in remaning whites in 3 batches alternating with the sifted flour mixture. Pour mixture into prepared tin and bake 40-50 min or toothpick clean. Turn cake out on wire rack. Preheat grill for sauce. Slice bananas into shallow flameproof dish. Stir in brown sugar & lemon. Place until grill 8 min, stir occasionally, unttil carmelized. Mash mixture until almost smooth. tip into bowl and stir in cream and rum. Serve beside slice of cake.
