Ingredients

  • 1 pork tenderloin (1 1/2 lb)
  • 1/2 cup low sodium soy sauce
  • 1/4 cup packed dark brown sugar
  • 1/4 cup purchased barbecue sauce
  • 2 Tbsp sesame oil
  • 2 Tbsp minced fresh ginger
  • 2 Tbsp dry sherry or mirin
  • 1 Tbsp chili garlic sauce

Preparation

Step 1

Trim fat and silverskin from tenderloin. Turn narrow ends under and tie with kitchen string so tenderloin is of uniform thickness.

Whisk together soy sauce, brown sugar, barbecue sauce, sesame oil, ginger, sherry, and chili garlic sauce; pour into a large resealable bag. Add tenderloin and tightly seal; chill 1-2 hours.

Prepare grill for indirect grilling, heating one side to medium high and the other side to medium low. Brush grill grates with oil.

Remove tenderloin from marinade, reserve marinade for a sauce. Grill tenderloin, covered, over medium low, 5 minutes. Flip tenderloin, grill 5 minutes and transfer to medium high side. Grill covered, flipping every 2-3 minutes, until an instant read thermometer inserted into the thickest part reads 140. Transfer to a cutting board, tent with foil, and let rest 5 minutes. Remove string and slice into 1 inch thick slices.

Boil reserved marinade 5 minutes. Serve with tenderloin.
