Dessert: Choco-Marshmallow S'more Bars

Inspired by the choco marshmallow bar and s'mores. The cake batter, similar to Hershey's recipe, makes enough for extra cupcakes.

Ingredients
- graham cracker crust:
- 1 1/2 cups graham cracker crumbs (about 20 squares)
- 1/3 cup unsalted butter, melted
- 9 ounces bittersweet chocolate, finely chopped
- cake:
- 2 1/4 cup plus 2 tbsp. sugar
- 1 3/4 cup all-purpose flour
- 3/4 cup plus 1 tbsp. cocoa powder (not Dutch-processed)
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp. vanilla extract
- 1 cup boiling water
- 4-5 cups mini marshmallows
- Topping:
- 1 1/3 cups chocolate chips (8 oz)
- 3 tbsp. butter
- 1 cup peanut butter
- 2 cups rice crispy cereal
- 12 x9 pan

Preparation
Step 1
Preheat oven to 350 degrees. Grease 9x12 baking pan with shortening.
Sift 2 cups plus 2 tbsp. sugar, flour, cocoa powder, baking powder, baking soda, and salt together into the bowl of an electric mixer. Using the paddle attachment, mix ingredients together on low speed.
In a large bowl, mix together eggs, milk, oil and vanilla. Add to flour mixture and beat on medium speed for 30 seconds. Scrape down sides of bowl and continue mixing on medium speed for 2 minutes. Add boiling water and stir to combine; set cake batter aside.
Place graham cracker crumbs, remaining 1/4 cup sugar, and melted butter in a large bowl. Stir until combined. Press into greased pan. use bottom of glass to pack down. Sprinkle chopped chocolate to cover; reserve some for top of cake. Bake for about 6-7 minutes until golden brown. Pour cake batter to 1/2 to 3/4 full. Sprinkle remaining chocolate on top. Place back into oven and bake until top is about to spring back. timing depends on how much cake batter you use (18-25 minutes). Remove from oven and sprinkle marshmallows to cover. Place back in oven until marhsmallows melt (4-5 minutes). Spread marshmallows with a knife dipped in water.
Topping: combine chocolate chips, butter and peanut butter in a saucepan; cook until melted and well blended. Remove from heat and cool. Sitr in cereal; spread over cooled bars. Chill.
