Ingredients
- 2 tsp butter
- 1 cup diced zucchini
- 1/2 cup red pepper cut in strips
- 2 green onions, sliced
- 2 minced cloves of garlic
- 3 tbsp flour
- pinch salt and pepper
- 1/4 tsp dried basil
- 1 1/2 cups half and half cream
- 1 lb shrimp, peeled and deveined
- 1/2 cup white wine
- 8 oz linguine or other long pasta
- 1 tbsp fresh parsley

Step 1
Melt butter in fry pan. Saute zucchini, green onion and red pepper and garlic. Cook till vegetables are tender crisp. Stir in flour, salt and pepper and basil til blended. Gradually add cream. Bring to a boil, cook and stir for 1 minute till thickened. Add shrimp and wine and simmer uncovered for 5 minutes till shrimp turns pink and the sauce is reduced.
Cook the pasta and toss the shrimp and cream sauce and sprinkle with parsley.
