- 2 c mashed potatoes
- 2 onions, thinly sliced and carmelized
- 1 bunch spinach, steamed ahd chopped
- 2 lean meat or vegetarian sausages
- Minced parsley

Step 1
Cube sausages and sear in a skillet with 2 t olive oil until golden. Mix with remaining warmed ingredients. Top with minced parsley and serve.
